A heavy slab of homemade chocolate rests in a parchment-lined 8x8 pan. This isn't some weak, melted-down fudge. It's a dense, comforting sweet made by whisking a pouch of supermarket milk powder the moment the sugar syrup bubbles. Here, you need full-fat milk powder—no non-fat substitutions—and good European butter. Cut thick squares while warm, leave the tin on the counter, and let people steal a piece.
Before you start
Mise en place is absolute.
This recipe waits for no one. Once the syrup is hot, the chocolate sets in minutes. Have your mold lined and every ingredient measured and sitting by the stove before you turn on the heat.
Ingredients

- Dutch-processed cocoa powder50 g
- granulated sugar300 g
- water120 ml
- European-style unsalted butter100 g
- rum extract1 1/2 tsp
- pure vanilla extract1 tsp

Line your mold and whisk the dry ingredients.
Line an 8x8-inch baking dish with parchment paper or plastic wrap, leaving an overhang for easy removal. In a large bowl, whisk together the sifted milk powder and cocoa powder until completely aerated and lump-free.

Boil the bound syrup.
Combine the sugar and water in a medium saucepan over medium heat. Stir gently just until the sugar dissolves, then stop stirring completely and let it boil vigorously for exactly 5 to 6 minutes, or until it reaches 235F (114C) on a digital thermometer.

Emulsify the fat.
The second the syrup hits the target temperature, pull the pot off the heat. Immediately add the cubed butter, rum extract, and vanilla extract, whisking aggressively until the mixture transforms into a glossy, smooth liquid.

Incorporate rapidly.
Pour the hot liquid over the dry ingredients and mix vigorously with a sturdy silicone spatula. It will rapidly thicken into a heavy, stiff dough, so fold in the chopped walnuts during the final few strokes.

Press, set, and chill.
Scrape the heavy mixture into your prepared dish and press it firmly into an even, flat layer using the back of a damp spoon. Cover tightly with plastic wrap, let it cool on the counter, then refrigerate for at least 2 hours before slicing into traditional rectangles.
Notes
Full-fat milk powder is non-negotiable.
Standard American non-fat dry milk will result in a chalky, brittle disaster. You need the lipid structure of whole milk powder, like Nestlé Nido, easily found in the Hispanic foods aisle of most supermarkets.
Rescuing seized chocolate.
If your syrup boiled a few seconds too long and the mixture becomes uncontrollably crumbly while mixing, immediately fold in 1 to 2 tablespoons of boiling hot water to restore hydration.
