Ignore the frozen, shrink-wrapped discs at the supermarket—they lack the funky sourdough tang. The hack is buying fresh, wet idli batter from your local Indian grocer and letting it age until slightly sour. Hit a smoking cast-iron skillet with a raw onion rub, pour the batter thick, scatter chopped serrano chilies, and leave it alone until the edges blister.
