Turkey & Bacon Lettuce Wrap

Turkey & Bacon Lettuce Wrap

LUNCH

A 12:15 p.m. lunch break isn't for prep bowls, especially when staring blankly into the fridge, desperate for the tactile, two-handed joy of a deli sandwich. The genius of the classic American Turkey Club was never the bread—it was how mayonnaise and rendered bacon fat mechanically bind the Applegate sliced turkey and lettuce, and by utilizing the deli-secret parchment paper roll technique, we transform overlapping iceberg leaves into a structural marvel. When the bacon fat pops, tuck it all under a cold iceberg leaf, bite into that hot, salty crunch, and get back to the clock.

Before you start

  • Crisp the bacon.

If you don't have leftover compliant bacon from breakfast, fry or bake your slices until perfectly crisp before you start assembling the wrap.

Ingredients

  • iceberg lettuce6 large
  • Whole30-compliant avocado oil mayonnaise2 tbsp
  • Whole30-compliant deli turkey5 med
  • Whole30-compliant sugar-free bacon3 med
  • avocado1/2 med
  • tomato2 med
  • red onion1 small
  • sea salt1/4 tsp
  • black pepper1/4 tsp

Method

  1. 01

Build the foundation on a square of parchment paper.

Lay a fifteen-inch square of parchment paper flat on the counter and arrange the iceberg leaves in the center, overlapping them generously to create a solid, gap-free rectangle roughly nine by ten inches.

  2. 02

Add the mortar to secure the fillings.

Lay one smaller piece of lettuce right in the center and slather your compliant mayonnaise directly onto it, which prevents the condiment from sliding around on the waxy outer leaves and acts as a glue for the meats.

  3. 03

    Layer the goods.

Shingle the turkey slices down the center, then top with the crispy bacon, avocado slices, tomato, and red onion. Hit the avocado and tomato with a generous pinch of sea salt and a crack of black pepper—never skip seasoning your vegetables.

  4. 04

    Execute the deli roll.

Grab the edge of the parchment paper closest to you, using it to support the lettuce, and fold the bottom edge tightly over the fillings.

  5. 05

Tuck and wrap as tightly as humanly possible.

Continue to roll away from yourself, pulling the parchment paper taut so it doesn't get rolled inside the sandwich. Halfway through, fold the left and right sides of the parchment inward like a burrito, then finish rolling until it is completely sealed.

  6. 06

Slice and serve directly through the paper.

Using a sharp serrated knife, slice the wrap in half on a diagonal straight through the parchment paper, keeping the paper on while you eat to hold everything together.

Notes

  • Hidden-Sugar Label Check.

Nearly all commercial bacon and deli turkey are cured with sugar, honey, or injected with banned carrageenan. You must specify Whole30-compliant sugar-free bacon (like Applegate Naturals or Pederson's) and clean oven-roasted turkey breast.

  • Why this swap? Iceberg Lettuce for Bread.

Iceberg provides an aggressive, watery crunch that mimics the textural resistance of toasted bread while keeping you entirely compliant and out of a post-lunch carb coma.

  • Why this swap? Avocado Oil Mayo for Standard Deli Mayo.

Traditional commercial mayonnaise relies on highly inflammatory seed oils and often sneaks in sugar. Compliant avocado oil mayo delivers the rich, luxurious mouthfeel the club sandwich demands without the inflammatory baggage.

  • Why this swap? Avocado for Cheese.

Without grains or dairy, the avocado provides the essential, satiating fat layer that tells your brain you just ate a massive, satisfying meal. Don't apologize for the fat—embrace it.
