Tuesday at 12:14 p.m., if you are currently stranded somewhere around Day 12 of your reset, staring blankly into the abyss of your refrigerator while nursing a profound exhaustion born of too much plain grilled chicken, a smoking twelve-inch skillet is your only real lifeline. Larb Gai is a spectacular, herb-loaded minced chicken salad—famously salty, sharply sour, intensely aromatic, and spicy enough to wake your palate from its mid-program coma. Traditionally, Larb relies on a dusting of toasted rice powder to bind its incredible dressing together. We obviously don’t do rice here, but we aren't skipping the essential toasted crunch; a pan-toast of crushed cashews delivers the exact same nutty, smoky binding power. The ground chicken hisses the second it hits the hot metal, demanding exactly ten minutes of highly parallel kitchen multitasking. Hit the meat with Red Boat fish sauce, scoop it into a lettuce cup, and eat.

Ingredients

  • raw unsalted cashews1/4 cup
  • ghee or avocado oil1 tbsp

  • large shallot1 large

  • fresh lime juice3 tbsp

Method

    Toast the cashews.

    Place a large, dry skillet over medium-high heat. Toss in the raw cashews and let them toast, shaking the pan occasionally, until they become deeply golden and smell wonderfully nutty (about 2 to 3 minutes). Immediately remove them from the pan so they don't scorch, transfer to a zip-top bag, and smash into a coarse powder with the bottom of a heavy mug.

    Build the fond.

    Return the skillet to the stove over medium-high heat and add the ghee or avocado oil. Once shimmering, add the ground chicken, pressing it flat into a single layer across the bottom of the pan. Leave it completely alone for 3 to 4 minutes to develop aggressive browning and crispy, caramelized edges.

    Prep the aromatics.

    While the chicken is browning hands-free, use those 3 minutes to thinly slice your shallot, roughly chop the mint and cilantro, and juice your limes.

    Finish the chicken.

    Break up the browned chicken with a wooden spoon into crumbly bits and continue to cook for another 2 to 3 minutes until no pink remains. Turn the heat completely off.

    Assemble and serve.

    While the chicken is still warm but completely off the active heat, dump in the sliced shallots, fish sauce, lime juice, chili flakes, and crushed toasted cashews. Stir vigorously so the residual heat slightly softens the shallots and the cashew powder soaks up the juices. Fold in the fresh mint and cilantro right at the end so they stay vibrant, then spoon into lettuce cups and eat immediately.
