Method

Blend the coconut, cashews, poppy seeds, roasted gram, chilies, one teaspoon fennel, cinnamon, cardamom, and cloves with warm water into a perfectly smooth paste.
If the mixture feels gritty, let it rest for two minutes to hydrate the poppy seeds, then blast it in the blender again until silky.

Heat the coconut oil and ghee in an Instant Pot on the sauté setting or in a stovetop pressure cooker over medium-high heat.
Once shimmering, drop in the bay leaf, kalpasi, and half teaspoon fennel seeds, letting them sizzle for ten seconds until the aroma hits you.

Add the diced onions and sweat them just until they turn soft and translucent.
Do not let them brown or caramelize, or your white kurma will turn muddy. Stir in the ginger-garlic paste and cook for thirty seconds until the raw garlic smell dissipates.
