Blend the chutney or open the jar of Zhoug.
If making from scratch, combine the cilantro, mint, serranos, ginger, garlic, peanuts, cumin, salt, lemon juice, and ice cubes in a blender. Pulse until it forms a thick, highly spreadable paste. The peanuts act as a binder, absorbing moisture so the chutney stays thick rather than watery.

Construct the hydrophobic barrier.
Lay out the sourdough slices and spread a thin, even layer of room-temperature butter on the inside of all four. Do not skip this; the butter acts as a waterproof shield, preventing the wet chutney from turning the bread into a soggy mess.
