At 11:30 PM by the glow of the open fridge, the best meal requires zero heat. Putting potato chips between two slices of buttered bread sounds like a drunken mistake. But to dismiss it is to miss the magic of working-class Irish comfort food. It is an exercise in pure textural contrast: impossibly soft bread, a waterproof barrier of sweet, high-fat Kerrygold butter, and the loud, salty crunch of cheese-and-onion chips. No sauces, no artisanal sourdough, no plates. Crush the top slice down until the chips splinter into the butter. Eat it over the sink.

Before you start

  • Soften the butter.

    Leave the butter on the counter for several hours prior to assembly; spreading cold butter will tear the soft white bread and ruin the sandwich before it even begins.

Method

    Lay both slices of bread flat and slather the softened butter edge-to-edge on each, building a thick moisture barrier.

    Empty the entire portion of chips onto one of the buttered slices, piling them as high as gravity allows.

    Place the second slice on top, butter-side down, then press your flat palm firmly into the sandwich until you hear a satisfying crunch. This fractures the chips, embedding them into the thick layer of butter so they don't fall out in your lap.

    Cut the sandwich in half—diagonally if you want to feel fancy—and eat it right away with a hot mug of strong black tea before the bread absorbs the moisture and the chips turn soggy.

Notes

  • Bread selection is critical.

    Skip the crusty sourdough or seeded artisan loaves. You want the softest, freshest, thick-cut white bakery bloomer or commercial Texas toast you can find.

  • Respect the minimalist architecture.

    Resist the urge to add deli ham, cheese slices, or mayonnaise. The genius of the sandwich is its pure, unadulterated three-ingredient ratio.
