Naturally Whole30 / Levantine. This isn't the pale chicken salad sweating in a supermarket deli tub; "chicken salad" shouldn't mean drowning sad poultry in a jar of commercial mayonnaise. By Day 12, food boredom hits, leaving you staring at yet another piece of plain grilled chicken in the fridge. Grab a jar of tahini. In Lebanon and Syria, chicken salad is instead bound with tarator—a luscious, intensely savory emulsion of pure sesame tahini, fresh lemon, and garlic. Tossing spice-rubbed chicken onto a hot sheet pan lets the oven do the heavy lifting, buying you six minutes to whisk a sauce so bright you'll pull vibrant, tarator-coated chicken out of the fridge on Day 13. Squeeze the lemon, toss the shredded meat, and eat it straight from the mixing bowl.

  • boneless, skinless chicken thighs1 1/2 lb
  • ghee1 tbsp
  • ground cumin1 tsp
  • ground coriander1/2 tsp

Method

    Roast the chicken.

    Preheat the oven to 425°F. Place the chicken thighs directly onto a rimmed baking sheet. Drizzle with the melted ghee, then sprinkle with the cumin, coriander, 1 teaspoon of the kosher salt, and the black pepper. Use your hands to rub the spices evenly over the meat. Roast in the oven for 18–20 minutes, or until cooked through and developing a nice caramelized crust.

    Emulsify the tarator.

    While the oven does the work, build the sauce. In a medium mixing bowl, whisk together the tahini, fresh lemon juice, grated garlic, and the remaining 1/2 teaspoon of salt. The tahini will immediately seize up and look like a thick, clumpy paste—don't panic, this is exactly what is supposed to happen. Vigorously whisk in the ice water, one tablespoon at a time, until the mixture suddenly relaxes, turning incredibly pale, smooth, and fluffy.

    Shred and toss.

    When the chicken is done, transfer it to a cutting board and use two forks to quickly shred it into bite-sized pieces. Add the warm, shredded chicken directly into the bowl of tahini sauce and toss well to coat. Fold in the fresh parsley, red onion, and chopped pickles.

    Serve.

    Eat it immediately while warm, or pack it into glass containers for the most satisfying cold desk-lunch of the entire reset.

Notes

  • Hidden sugar check.

    Nearly all commercial, off-the-shelf pickles are swimming in brines loaded with added sugars, artificial dyes, or non-compliant preservatives. The cook must read the label. Look for naturally fermented pickles found in the refrigerated section, or brands where the ingredient list is strictly cucumbers, water, vinegar, salt, and spices.

  • The tahini magic.

    If the tarator sauce still feels too thick after adding the initial 1/4 cup of ice water, do not be afraid to add another splash. Different brands of tahini have wildly different moisture contents. The goal is the consistency of a thick, pourable ranch dressing before adding the chicken.

  • Embrace the fat.

    Chicken thighs are utilized here instead of breasts because they carry more fat, which means more flavor, better browning, and a texture that survives the fridge without turning to sawdust. The body needs the energy during this reset; do not apologize for using flavorful cuts of meat.
