The Andalusian "Liquid Salad" Gazpacho

The Andalusian "Liquid Salad" Gazpacho

Gazpacho Andaluz·(gahz-pah-choh ahn-dah-looz)

LUNCH

Naturally Whole30 / Traditional Andalusian (Sin Pan variant). This isn't a precious, slow-simmered project, nor is it chunky salsa masquerading as a beverage. In Andalusia, the gazpacho sin pan (gazpacho without bread) is a deeply respected, widely practiced Spanish technique that relies entirely on the magical emulsion of tomato water and a generous pour of extra-virgin olive oil. This is not a diet adaptation; it is a sheer, raw emulsion that just happens to be exactly what your Whole30 requires. Fire up a high-speed blender and wait while the blade pulverizes Roma tomatoes, then give the liquid a quick push through a strainer. The fridge handles the rest. Pour it straight into a thermos for two o'clock on a Tuesday and get back to work.

Ingredients

  • plum or Roma tomatoes2 lb
  • Cubanelle or Anaheim pepper1 med
  • English cucumber1/2 small
  • white or red onion1/4 small
  • garlic clove1 med
  • Sherry vinegar2 tbsp
  • kosher salt1 1/2 tsp
  • extra-virgin olive oil1/2 cup

Method

  1. 01

In the jug of a high-powered blender, combine the chopped tomatoes, pepper, cucumber, onion, garlic, sherry vinegar, and salt.

Because we are using the blender and a strainer, do not waste your precious time peeling the tomatoes.

  2. 02

Blend on high speed for about 2 minutes, until the mixture is completely pulverized and looks like a frothy, bright red juice.

  3. 03

With the blender running on medium-low speed, remove the lid insert and slowly drizzle in the extra-virgin olive oil in a steady stream.

Here is where the magic happens. Watch as the soup transforms from translucent red to a creamy, opaque, vibrant pinkish-orange, and blend for another 30 seconds to lock the emulsion.

  4. 04

Pour the blended gazpacho through a fine-mesh strainer set over a large bowl or pitcher, using the back of a ladle to press the liquid through.

Discard the fibrous tomato skins and pepper seeds left in the strainer. Do not skip this step; it is the difference between a rustic smoothie and velvet.

  5. 05

Cover and chill in the refrigerator for at least 2 hours.

Taste and add a pinch more salt or a splash more vinegar if it needs a punch. Serve ice cold, straight from a glass or in a bowl garnished with a drizzle of olive oil.

Notes

  • Technique Tip: The Garlic Germ.

Raw garlic is sharp and has a nasty habit of causing indigestion (what the Spanish refer to as the garlic "repeating" on you). By slicing the clove in half and using the tip of your knife to pluck out the green little sprout in the center (the germen), you remove the most aggressive sulfur compounds. You get the savory depth without the afternoon heartburn.

  • Technique Tip: The Olive Oil Stream.

Do not just dump the oil in at the beginning. By streaming it in slowly while the blades are moving, you are forcing the fat molecules to suspend evenly in the tomato water. This is the exact same culinary science that makes mayonnaise thick and creamy, and it is the secret to making this soup feel rich without a drop of dairy or a crumb of bread.

  • Hidden-Sugar Label Check (Survival Skill):

Check your Sherry Vinegar! While most authentic sherry vinegars are perfectly compliant, some commercial brands sneak in added sugars or non-compliant sulfites to mimic aging. If your label shows sugar, swap it for a compliant red wine vinegar.
