Skip laboring over fried patties for a simpler trick: mashing a few chickpeas straight into the pan to bind the tart masala. Wrap everything in heavy-duty aluminum foil while the flatbread remains pliable, let it steam in its own heat, and unpack a meal that tastes exactly like a Tuesday afternoon in an Ohio kitchen.
Before you start
Soak the kala chana overnight.
Rinse the dried black chickpeas thoroughly, cover with at least three inches of water, and let sit for 8 to 12 hours so they can double in size.

Method

Cook the soaked chickpeas under high pressure until tender but fully intact.
Place the overnight-soaked and drained kala chana into an Instant Pot with two cups of fresh water and a teaspoon of salt. Cook on High Pressure for 30 minutes, allowing a 15-minute natural release before venting the rest; do not drain the starchy cooking water.

Whisk the dry spices with water to create a protective slurry.
In a small bowl, combine the coriander, amchur, Kashmiri chili, roasted cumin, turmeric, garam masala, kala namak, and a quarter cup of water. Tossing dry spices directly into hot fat invites an acrid burn; this grandmother-approved trick lets the spices bloom and fry beautifully.

Temper the aromatics in hot ghee.
Heat the ghee in a wide, heavy-bottomed skillet over medium heat, then drop in the cumin seeds. When they sizzle, immediately stir in the asafoetida, grated ginger, and slit green chilies, stirring continuously for thirty seconds until wildly fragrant.

Fry the masala paste until the ghee separates.
Carefully pour the spice slurry into the skillet—it will sputter. Fry for a couple of minutes until the water evaporates and the ghee bubbles at the edges, signaling the masala is perfectly cooked.

Transfer the cooked kala chana into the skillet using a slotted spoon. Here is the secret to a mess-free wrap: forcefully mash about three tablespoons of the chickpeas against the side of the pan with the back of your spoon.

Pour in half a cup of the reserved Instant Pot liquid. Simmer on medium-low for five to eight minutes until the moisture evaporates, leaving the chickpeas coated in a velvety, cohesive spice paste that will stick together during transport.

Macerate the raw onions in lime juice.
Toss the sliced red onions with the lime juice and a tiny pinch of salt to remove their harsh bite, creating a bright, acidic crunch to cut the earthy legumes.

Warm the parathas in a skillet. Smear green chutney down the center, lay down a small bed of shredded cabbage to protect the bread from getting soggy, and spoon on the warm chickpeas. Top generously with the lime-soaked onions, roll tightly, and pack in the steel tiffin.

Source authentic desi chickpeas.
Do not attempt to substitute standard canned white chickpeas. Kala chana are smaller, darker, and possess a dense, nutty texture that is entirely irreplaceable here.
Amchur is non-negotiable.
