Skillet "Minute Steaks"
Weeknight Suppers at Bubbe's Stovetop
This isn't a thick ribeye demanding a meat thermometer—just a tough supermarket cube steak turning into velvet inside a cast-iron skillet. Do not turn up your nose at the onion soup mix or the ketchup; as the oil spits, the dehydrated onions and sweet ketchup chemically transform the braising liquid into a dark, sticky glaze. Slice the yellow onions thin, give the beef exactly three minutes, and do not walk away.
Ingredients
- chuck steaks2 lb
- Spanish onions2 large
- neutral oil2 tbsp
- kosher salt1 tsp
- black pepper1 tsp
- paprika1 tsp
- all-purpose flour1/4 cup
- cremini mushrooms1 cup
- frozen crushed garlic cubes2
- sweet concord grape wine1/2 cup
- beef broth1 cup
- ketchup2 tbsp
- dry onion soup mix1 packet
Method
- 01
Sear the seasoned steaks in batches to build a dark crust.
Season the meat aggressively with salt, pepper, and paprika, then dust lightly with flour. Warm the oil in a wide, heavy-bottomed skillet over medium-high heat. Sear the steaks for about two minutes per side, then remove them to a plate. Do not crowd the pan.
- 02
Slowly caramelize the onions in the residual beef fat.
Lower the heat to medium and add the mountain of sliced onions. Have patience here. Cook them, stirring occasionally to scrape up the browned bits, until they are soft, sticky, and a deep amber color. This will take about twenty minutes. Stir in the garlic and mushrooms during the final five minutes.
- 03
Deglaze the skillet and build the savory braising liquid.
Pour in the sweet wine and let the alcohol bubble off. Whisk in the beef broth, ketchup, and the packet of onion soup mix until a uniform, opaque gravy forms.
- 04
Submerge the steaks and simmer until fork-tender.
Nestle the seared beef and any resting juices back into the skillet. Bring the liquid to a gentle boil, then immediately drop the heat to the lowest possible simmer and cover tightly. Let it cook undisturbed for two to two and a half hours, checking occasionally to ensure the liquid hasn't evaporated. The meat is ready when it yields entirely to the pressure of a fork.
- 05
Serve piping hot with copious amounts of the thick onion gravy.
Spoon the meat and jammy sauce generously over a bed of wide egg noodles or mashed potatoes.
Notes
Sourcing the right cut of meat is the only absolute rule.
Request minute steaks or thinly sliced flat iron at the butcher counter. Do not confuse this with tenderized round or cube steak, which lacks the necessary fat and connective tissue for a long braise.
Embrace the processed pantry staples.
The onion soup mix and ketchup are not shortcuts; they are the culturally authentic foundation of the dish's distinct umami profile.
