Real malai kofta is a triumph of fat and spice. In its original form, it is also a gastrointestinal minefield of cashews, melon seeds, and boiled onions, but we rebuild its architecture using buttery macadamia nuts, traditional white poppy seeds, and garlic-infused oil to safely capture the allium flavors. Once the paneer binds, lower the dumplings into the 350-degree oil with a slotted spoon and let the garlic-infused ghee do the heavy lifting as you swirl them into a Monash-compliant macadamia cream, yielding a profoundly reassuring, velvety classic that preserves the lush, mouth-coating weight of the original gravy without punishing the cook who eats it.

The macadamia and poppy seed paste can be blended ahead of time.

Method

Combine the raw macadamia nuts and white poppy seeds in hot water to soften, then blend into a smooth paste.
Let them soak for at least 20 minutes before processing them in a blender with their soaking water until you achieve a luxuriously smooth, white paste. Set aside.

Knead the grated paneer, mashed potatoes, cornstarch, and spices into a smooth dough, then divide and stuff.
Roll a portion of the dough into a ball, flatten into a disc, and place a pinch of chopped macadamia nuts and a couple of raisins in the center. Bring the edges together to enclose the filling and roll back into a perfectly smooth, crack-free ball. Repeat with the remaining dough and lightly dust with extra cornstarch.

Deep fry the koftas in batches in hot neutral oil until they turn a beautiful, light golden brown.
Let them fry undisturbed for a minute so a crust forms, then gently turn with a slotted spoon. Remove and drain on paper towels.

Temper the whole spices in garlic-infused oil and butter, then sauté the grated ginger and scallion tops.
Let the bay leaf, cinnamon, cardamom, cloves, and mace sizzle in the wide, heavy-bottomed skillet for about 30 seconds until highly aromatic before adding the aromatics. Cook until the greens are soft.

Stir in the macadamia-poppy paste and cook until the fat begins to separate, then slowly incorporate the dairy.
Turn the heat down to low. Stream in the whisked yogurt while stirring continuously to prevent curdling, followed by the sugar, salt, and pepper. Finally, stir in the cream and saffron-infused milk, simmering gently until the gravy is rich and pale.

Finish the gravy with crushed dried fenugreek leaves and pour it over the plated koftas just before serving.
Do not boil the delicate koftas in the gravy, as they will disintegrate. Serve immediately with warm gluten-free naan or fluffy basmati rice.
