This isn't precious, silver-platter hotel food. Almost every topping belongs on dense, dark sour rye bread, but delicate seafood demands a buttered white canvas. The success of the dish relies entirely on a low burner flame: cook the eggs slow with a splash of dairy, pulling the skillet off the burner a full minute before you think they're done, yielding a velvety bed that gently warms the supermarket cold-smoked salmon.

Ingredients

  • thick slices artisan white bread or mild sourdough2 large

  • eggs4 large

  • cold-smoked salmon4 oz
  • flaky sea salt1/4 tsp

Method

    Spread a generous, edge-to-edge layer of softened European butter on the lightly toasted bread.

    This isn't just for flavor; in traditional smørrebrød, the butter acts as a waterproof barrier so the warm eggs don't make the bread soggy.

    Vigorously beat the eggs and milk in a bowl until completely homogenous and slightly frothy.

    Hold off on adding the salt until the very end to keep the egg proteins tender.

    Melt the unsalted butter in a non-stick skillet over medium-low heat and pour in the eggs.

    Do not let the butter bubble or turn brown. Let the eggs sit undisturbed for about 20 seconds, then use a silicone spatula to gently sweep them from the edges toward the center in large, soft folds.

    Remove the pan from the heat while the eggs are still glossy and quite wet, then fold in the salt and pepper.

Notes

  • The bread matters just as much as the topping.

    Do not use traditional dark Danish rye (rugbrød) for this sandwich; its intense maltiness will completely overpower the delicate smoke of the salmon.
