If you grew up anywhere near the border, or had parents who hauled those flavors all the way to some snowy driveway in Ohio, you know the gospel of good queso. But Queso Compuesto is the king of dips—a legendary antojito built on the unapologetic glory of real deli American cheese, loaded with spiced picadillo and fresh guacamole. Skip the boxed supermarket bricks and ask the deli counter for a real block; it melts like an absolute dream. Whatever you do, do not mix the bowl before you serve it. The whole point is dragging a sturdy chip through the hot cheese, savory beef, and cold avocado in one perfect, uncorrupted sweep.
Before you start
Warm your tortilla chips.
To truly replicate the restaurant experience, spread store-bought tortilla chips on a baking sheet and toast them in a 350°F oven for 5 minutes just before serving.
Ingredients

- lean ground beef1/2 lb
- white onion1 med
- jalapeño peppers2 small
- garlic2 small clove
- ground cumin1 tsp
- mild chili powder1 tsp
- kosher salt3/4 tsp
- black pepper1/4 tsp
- Hass avocados2 large
- fresh lime juice1 tbsp
- fresh cilantro2 tbsp
- butter1 tbsp
- Roma tomato1 large
- cornstarch1 tbsp
- whole milk3/4 cup
- American cheese1 lb
- Mexican crema1/4 cup
- pico de gallo2 tbsp
- sturdy tortilla chips1 large bag
Method

Brown the picadillo.
Heat the oil in a medium skillet over medium-high heat, then sauté half the diced onion and one diced jalapeño until soft. Stir in the minced garlic for 30 seconds, then add the ground beef, cumin, chili powder, half a teaspoon of salt, and the black pepper, breaking the meat apart until deeply browned and cooked through. Drain any excess grease and keep the meat warm.

Mash the quick guacamole.
Scoop the avocado flesh into a small bowl and add the lime juice, cilantro, and remaining quarter teaspoon of salt. Mash with a fork until combined but still slightly chunky, then set aside.

Build the queso base.
In a medium saucepan, heat the butter over medium-low heat and cook the remaining onion and jalapeño until softened. Stir in the diced Roma tomato for one minute, sprinkle the cornstarch evenly over the vegetables, and whisk in the milk until the liquid begins to bubble and thicken.

Melt the cheese slowly.
Reduce the heat to the lowest possible setting and add the shredded American cheese one handful at a time. Whisk gently and constantly, waiting for each handful to melt completely into a silky sauce before adding the next.

Assemble the dip without mixing.
Pour the hot chile con queso into a wide, shallow serving bowl to form the base. Drop a large mound of the warm picadillo directly into the center, top with a generous scoop of the fresh guacamole, and finish with a dollop of crema and pico de gallo.

Serve right away with a basket of warm, sturdy tortilla chips so your guests can drag them through every unmixed layer.
Notes
Shred your own cheese from a deli block.
Pre-shredded cheese in plastic bags is coated in cellulose, an anti-caking agent that will cause your queso to turn unpleasantly grainy. If the deli won't give you an unsliced block, ask them to slice it as thick as their machine allows and chop it into cubes at home.
