Ingredients

  • Yukon Gold or Russet potatoes1 1/2 lb

  • Roma tomatoes3 med
  • chicken bouillon powder1 1/2 tsp
  • ground cumin1/2 tsp
  • dried Mexican oregano1/2 tsp
  • black pepper1/4 tsp
  • water1 tbsp
  • eggs4 large

Method

    Parboil the potatoes to ensure a crispy exterior and fluffy interior.

    Drop the diced potatoes into a pot of salted boiling water and cook for 5 to 7 minutes until just fork-tender. Drain them thoroughly and let them sit for a couple of minutes so the excess steam evaporates.

    Fry the parboiled potatoes until deeply golden.

    Heat 2 tablespoons of oil in a large, heavy-bottomed skillet over medium-high heat. Add the potatoes in a single layer, letting them sit undisturbed for 3 minutes to develop a crust, then toss and fry until crisp all over.

    Sauté the aromatics in the center of the pan.

    Push the potatoes to the perimeter of the skillet and add the remaining tablespoon of oil to the center. Toss in the onion and jalapeño, cooking until translucent, then stir in the garlic for 30 seconds until fragrant.
