
Palestinian-American Sheet-Pan Sumac Chicken

Ten minutes. That is the maximum tax demanded to hack Musakhan—a masterpiece, traditionally a celebration of the autumn olive harvest built on slow-rendered onions, sumac berries, and taboon bread meant to soak up the spiced olive oil. But if you’re a working adult navigating the brutal elimination phase on a Wednesday night, we force the oven to do the heavy lifting of caramelization, swapping the wheat bread for a dense bed of root vegetables to catch the rendering chicken fat and olive oil. Rub the thighs, spread them on a half-sheet pan, and eat with your hands.
Before you start
Slice the vegetables.
Peel and slice the sweet potatoes into 1/2-inch rounds, and halve and slice the onions into 1/4-inch moons.
Prep the aromatics.
Mince or press the garlic, zest and juice the lemon, and roughly chop the parsley.
Ingredients

Method

Preheat your oven to 425°F and line a heavy-duty sheet pan with parchment paper.

Build the base.
In a large mixing bowl, toss the sweet potato rounds and sliced red onions with 1/4 cup of the olive oil and 1 teaspoon of the sea salt. Spread them evenly across the pan, keeping the sweet potatoes mostly on the bottom so they can act as a sponge for the juices.

Make the sumac paste.
In the same unwashed bowl, combine the remaining 1/4 cup of olive oil, sumac, cinnamon, clove, minced garlic, lemon zest, lemon juice, and the remaining 1/2 teaspoon of sea salt into a thick, fragrant crimson paste.

Massage the chicken.
Add the chicken thighs to the bowl and use your hands to aggressively rub the sumac paste all over them, making sure to get deep under the skin.

Roast the whole thing.
Place the chicken thighs skin-side up directly on top of the onion and sweet potato bed. Scrape any remaining paste from the bowl over the top. Roast undisturbed for 40 to 45 minutes, letting the ambient heat crisp the skin while the fat renders down to caramelize the onions and baste the sweet potatoes.

Finish and serve.
When the chicken is deeply browned and the sweet potatoes are fork-tender, remove from the oven. Scatter the fresh parsley over the hot pan and serve immediately with extra lemon wedges.

Authentic Musakhan uses rustic flatbread to catch the chicken and olive oil juices. Dense, starchy white sweet potato rounds placed at the bottom of the pan serve the exact same mechanical purpose: soaking up the liquid gold.

Traditional recipes rely on seed spices like cumin and black pepper for earthy warmth. Because seed spices trigger inflammation for many on AIP, we rebuild that Levantine depth using bark and flower-derived spices alongside pungent garlic.
Why this swap? Parsley for pine nuts.
Toasted pine nuts usually provide the crunch in this dish. With nuts eliminated, we rely entirely on the crispy chicken skin and the bright snap of raw parsley for textural contrast.
Sourcing tip: Sumac.
Sumac is a berry, making it a perfectly safe, potent ingredient for the AIP pantry. However, always check the label of commercial sumac to ensure it isn’t cut with non-compliant vegetable oils or nightshade-derived red food dyes.
