Three-fifteen in the afternoon, backpacks hit the floor, the broiler clicks on, and a split bolillo roll gets prepped for the heat. You don't just slap cold beans on raw bread. You scoop out the crumb to make a boat, paint it with a waterproof shield of butter, pre-toast it, and apply only steaming hot beans before the cheese. This rapid weeknight version leans on standard supermarket staples but maintains the strict order of operations to properly anchor those smeared pinto beans. Pull the tray as soon as the cheese blisters, and hand them out hot.

Before you start

  • Hollow out the bread.

    Gently pinch and scoop out a little bit of the soft white interior crumb from the center of each bread half to create a shallow boat. This prevents the beans from sliding off and improves the crunch.

Ingredients

  • fresh bolillos or sturdy hoagie rolls4 med

Method

    Preheat the broiler to high.

    Place a sturdy baking sheet on the oven rack closest to the heat source.

    Crown with fresh salsa.

    Let the molletes cool for just a minute, then pile the top of each high with cold, fresh pico de gallo to provide a sharp, acidic contrast to the rich cheese. Serve immediately.

Notes

  • Air fryer alternative.

    For a quick solo snack, toast the buttered bread halves in an air fryer at 350°F for 3 minutes, add the warm beans and cheese, and fry for another 3 minutes until bubbling.

  • Antojito upgrades.

    Sprinkle cooked, crumbled Mexican chorizo or diced ham over the warm beans right before adding the cheese for a heartier bite.
