At six-thirty on a Tuesday, by Day 12 of a Whole30 reset, when culinary fatigue sets in and the prospect of another plain chicken breast threatens your sanity, the Maghreb offers a sharp, herbaceous counterpunch of garlic, cumin, and a fistful of cilantro. Traditionally pounded by hand in a mortar and pestle to slowly roast whole catches, we bypass the romance for the reality of a frantic Tuesday night as the blender roars, emulsifying the vibrant sauce in seconds, slathering quick-cooking fillets and blistering tomatoes on a single sheet pan. Set the oven to 400 degrees, shove the half-sheet pan inside, and walk away.
Before you start
Trim the green beans and thoroughly dry the fish fillets.
Doing this immediately sets you up for rapid assembly once the food processor is running.
Toast the ground cumin in a dry skillet for sixty seconds if you have an extra minute.
This blooms the essential oils in the spice and deepens the earthy baseline of the chermoula.

Method

Preheat your oven to 400°F (200°C).
Line a large, rimmed baking sheet with parchment paper or aluminum foil for effortless cleanup.

Combine the cilantro, parsley, garlic, cumin, paprika, salt, cayenne, lemon zest, lemon juice, and preserved lemon in a food processor.
Pulse until roughly chopped, then, with the machine running, slowly stream in the 1/3 cup of olive oil until the mixture forms a thick, brilliant green paste.

Toss the green beans and cherry tomatoes on the baking sheet with one tablespoon of olive oil and a pinch of salt.
Push the vegetables to the edges of the pan to clear a space in the center for the fish.

Pat the fish fillets completely dry with a paper towel and season lightly with salt.
Moisture is the enemy of a good roast. Once dry, spoon exactly half of the chermoula evenly over the tops of the fillets, reserving the remaining sauce in a small bowl.

Place the fillets in the center of the sheet pan and roast for 12 to 15 minutes.
You are looking for the fish to turn completely opaque and flake easily when nudged with a fork, while the tomatoes should be blistering and bursting.

Plate the roasted fish alongside the blistered vegetables.
Spoon a generous dollop of the fresh, reserved chermoula directly over the hot fish right before eating to revive the vibrant herbaceous flavors.

Check your preserved lemon labels strictly for compliance.
Authentic Moroccan preserved lemons are a culinary revelation, lending an umami-rich, salty tang that regular lemons simply cannot match. However, the only ingredients should be lemons, water, and salt. Put the jar down if you see sugar, sulfites, or artificial preservatives. If you can't find a compliant jar, just stick to the fresh lemon zest and juice—it will still be spectacular.
Adjust your roasting time depending on the thickness of your catch.
A thin tilapia fillet will cook in 8 minutes; a thick center-cut halibut fillet might take 16. Keep a close eye on the oven starting at the 10-minute mark.
Do not shy away from the generous amount of extra-virgin olive oil.
