At six a.m., the kitchen is quiet, the heat is low, and the jasmine rice is swelling in the broth. The secret to this morning soup lies in two uncompromising rules: mastering the pungent fermented soybean dipping sauce that brings the bowl to life, and the absolute mandate to never, ever stir the boiling fish. Hit the bowl with a heavy dusting of white pepper and eat it while it's scalding.

Before you start

  • Rinse the cooked rice.

    Briefly rinse your pre-cooked or day-old jasmine rice under warm water to wash away excess surface starch. This is a crucial step to ensure the grains remain distinct and prevent the soup from turning gummy.

Method

  1. 01

    Prepare the dipping sauce.

    Combine the Tao Jeow, lime juice, palm sugar, minced ginger, minced garlic, and chilies in a small bowl, stirring vigorously until the sugar is completely dissolved into an aggressive harmony of salty, sour, spicy, and sweet.

    Clean the fish to eliminate any odor.

    Place the fish chunks in a colander, gently toss them with a pinch of salt, and rinse under cold water to remove the surface proteins and slime that cause fishy odors. Pat the fish completely dry with paper towels.

    Steep the aromatics to build the broth.

    In a large pot, bring the chicken broth, three slices of galangal, cilantro stems, smashed garlic, and white peppercorns to a gentle boil. Reduce the heat to low, cover, and let the aromatics steep for 20 minutes before seasoning with the light soy sauce and salt.

    Bring the main seasoned broth to a gentle simmer and carefully slide the blanched fish chunks into the liquid. Step away from the pot entirely; stirring breaks the delicate flesh and clouds the soup with fish oils. Poach gently for 3 to 4 minutes until opaque throughout, then turn off the heat.

    Assemble and garnish the bowls.

    Divide the rinsed jasmine rice among four wide bowls and gently ladle the hot broth and cooked fish over the top. Finish each portion with Tang Chye, crispy fried garlic and its oil, celery, scallions, and a heavy dusting of white pepper. Serve with the dipping sauce on the side.

Notes

  • Choose the right fish.

    Opt for firm white fish like Snapper, Grouper, Halibut, or Sea Bass. Avoid oily salmon or delicate flounder that will disintegrate in the hot liquid and muddy the pristine broth.

  • Do not skip the Tao Jeow.

    This fermented yellow soybean paste is widely available in Thai or Chinese markets and is fundamentally required to elevate the mild soup to the bold standards of an authentic Thai kitchen.

  • A note on celery.

    If Chinese celery is unavailable, you can substitute the leafy, tender innermost stalks of standard Western celery.
