Hailing from the southwestern spice coast of India, this dish traditionally demands thirty minutes of standing over a hot skillet, slowly coaxing onions into a dark, jammy caramel. We are going to cheat time, not flavor. By tossing the aromatics, spices, and a generous slick of coconut oil onto a sheet pan, a 400-degree oven does the heavy lifting. The hot oil blooms the fennel and black pepper, the tomatoes melt into a rich glaze, and your breakfast rotation is permanently rescued—all for under ten minutes of actual work.
Before you start
Slice those onions paper-thin.
The geometry matters immensely. Thick wedges will steam and remain crunchy; paper-thin slices (use a mandoline to save time) dehydrate rapidly in the high heat of the oven, allowing their natural sugars to concentrate and caramelize.
Score the eggs to absorb the flavor.
Use a paring knife to make 3 or 4 shallow vertical slits down the sides of each peeled egg, cutting just into the white. This allows the spiced onion oil to penetrate the egg while it finishes in the oven.

Preheat the oven to 400°F and prepare your sheet pan.
Line a large, rimmed baking sheet with parchment paper to save yourself the cleanup later.

Toss the aromatics and spices directly on the pan.
Combine the sliced onions, diced tomatoes, ginger, garlic, curry leaves, fennel seeds, coriander, chili powder, black pepper, turmeric, and salt. Drizzle the melted coconut oil over everything and use your hands to massage it thoroughly into the vegetables, then spread the mixture out into a flat, even layer.

Let the oven handle the caramelization.
Roast for 20 to 25 minutes. Set a timer to pull the pan out halfway through (around the 12-minute mark) to give everything a vigorous stir so the edges do not burn, then flatten it out again.

Roll the scored eggs through the finished masala.
When the onions have shrunk into a deeply browned, jammy paste, pull the pan from the oven. Toss the hard-boiled eggs in the mixture until they are stained red and coated completely, then return the pan to the oven for 3 to 4 final minutes to heat the eggs through.
Notes
Respect the fennel.
Do not skip the fennel seeds. While standard Indian restaurant fare relies heavily on cumin, the distinct, sweet, anise-like warmth of fennel is the geographical fingerprint of Kerala cuisine.
Beware of hidden sugars in commercial spice blends.
If you choose to use a pre-mixed commercial curry powder instead of the individual spices listed, you must check the label. Many blends contain hidden sugars or maltodextrin to prevent caking, which instantly breaks the Whole30 protocol.
