Before you start
Slice and mince the scallions.
Prioritize the dense white and light green parts, mincing them as finely as you can before transferring to a medium heat-proof glass or metal bowl.

Method

Massage the scallions with salt.
Add the coarse salt to your minced scallions and aggressively massage it into the onions with your fingers for about 30 seconds to draw out the bitter cellular water.

Top the massaged scallions with the grated garlic, black pepper, chicken bouillon powder, and lemon juice, but do not mix them just yet.
