The secret isn't a fifty-dollar spice blend, but the simple, unglamorous act of dry-toasting the lentils before they ever touch water, a step that saves the whole operation from becoming glue. Check the Instant Pot's sealing ring, drop in a heavy spoonful of ghee, and let the machine do the work.

Before you start

  • Source the correct lentils.

    You are looking for Moong Dal Dhuli, which are hulled and split yellow mung beans. Do not substitute whole green mung beans, as they require entirely different hydration and cooking times.

Method

    Toast the dry, unwashed lentils in the Instant Pot on sauté mode until they smell warmly nutty and turn slightly golden.

    This takes about 2 to 3 minutes and is the non-negotiable grandmother secret to preventing a gluey paste. Once toasted, remove them, combine with the rice in a bowl, and rinse thoroughly under cold water until it runs clear, then let them soak while you prep.

    Wipe the pot dry, return to sauté mode, and heat the ghee and neutral oil until shimmering before sizzling the whole spices.

    Allow the pressure to release naturally for 10 minutes before manually releasing the rest, then open the lid and stir vigorously.
