Huevos con Weenies en Tortilla de Harina
Mañanas y Madrugadas: The Breakfast Taco & Morning Rhythms
Slice supermarket hot dogs into coins and toss them straight into a smoking cast-iron skillet; in Tejano households, the scent of hot dogs blistering in pork fat means Saturday morning is officially underway. Processed meat hits hot manteca until its edges crisp and curl; the secret isn't in the pedigree of the ingredients, but the patience to let the meat properly caramelize before the eggs ever touch the pan. Fold the scramble into a warm flour tortilla and eat it standing up.
Before you start
Slice the meat with precision.
Cut the hot dogs into exact quarter-inch coins. Any thicker and they won't crisp properly; any thinner and they will turn to tough leather in the hot fat.
Whisk the eggs in advance.
Beat the eggs thoroughly in a small bowl with the salt and pepper before you ever turn on the stove, ensuring a fluffy final texture.
Ingredients
- pork lard1 tbsp
- beef hot dogs2 large
- eggs4 large
- salt1 pinch
- black pepper1 pinch
- flour tortillas4 med
- refried pinto beans1/2 cup
- cheddar cheese1/2 cup
Method
- 01
Warm the flour tortillas until puffed and spotted.
Heat a dry skillet or comal over medium-high heat. Toast the tortillas until they puff up and develop golden-brown spots, then wrap them in a clean kitchen towel to keep them steamy and pliable.
- 02
Blister the hot dogs in the hot lard.
In a skillet, melt the manteca over medium heat. Add the sliced hot dogs in a single layer, letting them fry undisturbed for a minute before tossing. Cook until deeply browned with crispy, blistered edges.
- 03
Gently scramble the eggs into the crisped meat.
Reduce the heat to medium-low. Pour the beaten eggs directly over the hot dogs, letting them sit for fifteen seconds before gently folding from the edges to the center to create large, soft curds.
- 04
Pull the pan from the heat while the eggs are still glossy.
Remove the skillet from the burner just before the eggs look completely dry. The residual heat of the pan will finish the job perfectly without turning your scramble to rubber.
- 05
Assemble the breakfast tacos.
Smear warm refried beans down the center of a tortilla. Top with a generous scoop of the huevos con weenies, a sprinkle of cheese, and a dash of your favorite salsa, then fold.
Notes
Respect the fat.
Using manteca de cerdo (pork lard) or saved bacon grease instead of cooking oil is non-negotiable for that authentic, savory diner flavor. It allows the meat to blister evenly without scorching.
Make it a la Mexicana.
To dress this up the traditional interior Mexican way, finely dice white onion, Roma tomatoes, and a fresh serrano pepper. Sauté the vegetables in the lard right after the hot dogs finish blistering, then add your eggs.
