San Cai Yi Tang: The Weeknight Blueprint

Hit the carbon steel wok with cold oil and toss in the ground pork before the exhaust fan even reaches full speed, pouring in a heavy splash of Shaoxing wine to release the pure, unpretentious aroma that fills Cantonese kitchens on a Tuesday night. Shallow-frying the cubed Yukon Gold potatoes first seals the starch, creating a microscopic crust that absorbs the rich oyster sauce and rendered pork fat without collapsing into mush. Scrape the whole mess over hot jasmine rice.

Before you start

  • Purge the potato starch.

Submerge the cubed potatoes in a bowl of cold water for 5 minutes, then rinse under running water until the water runs perfectly clear. Drain thoroughly and pat them completely dry with paper towels to prevent oil splatter.

  • Marinate the pork.

In a medium bowl, vigorously mix the ground pork with 1 teaspoon of the light soy sauce, the sesame oil, white pepper, and 1/2 teaspoon of the cornstarch until the liquid is absorbed and the meat turns slightly sticky. Let it rest for 10 to 15 minutes.

Ingredients

  • 80% lean ground pork8 oz
  • Yukon Gold potatoes2 med
  • neutral cooking oil4 tbsp
  • garlic3 med cloves
  • fresh ginger1 tsp
  • scallions2 large
  • light soy sauce4 tsp
  • toasted sesame oil1 tsp
  • ground white pepper1/4 tsp
  • cornstarch1 1/2 tbsp
  • oyster sauce1 1/2 tbsp
  • dark soy sauce1 tsp
  • Shaoxing wine1 tbsp
  • sugar1/2 tsp
  • chicken broth3/4 cup
  • cold water2 tbsp

Method

  1. 01

    Shallow-fry the potatoes.

Heat a wok or heavy-bottomed skillet over medium-high heat with 3 tablespoons of neutral oil. Fry the dried potatoes in a single layer, undisturbed for 2 to 3 minutes, then toss and fry for another 3 to 4 minutes until the edges are golden and crispy. Remove the potatoes with a slotted spoon, leaving the hot oil in the pan.

  2. 02

    Sear the aromatics and meat.

Add the remaining tablespoon of oil if the pan is dry, then toss in the garlic, ginger, and scallion whites. Stir-fry for 15 seconds until fragrant, then add the marinated pork, flattening it into a thin layer. Sear for 30 seconds to build flavor, then violently break it apart with your spatula and stir-fry until the rendered fat turns clear.

  3. 03

    Deglaze and braise.

Pour the Shaoxing wine around the hot perimeter of the wok to deglaze. Return the potatoes to the pan and pour in the broth, oyster sauce, remaining 1 tablespoon of light soy sauce, dark soy sauce, and sugar. Bring to a rigorous boil, reduce the heat to medium-low, cover with a tight-fitting lid, and simmer for 5 to 7 minutes until the potatoes are tender but intact.

  4. 04

    Thicken and gloss the sauce.

Remove the lid and ensure a shallow pool of savory liquid remains. Mix the remaining 1 tablespoon of cornstarch with the 2 tablespoons of cold water to form a slurry, then pour it into the bubbling sauce. Toss continuously for 30 to 60 seconds until the sauce turns thick, glossy, and clings tightly to the potatoes and pork.

  5. 05

    Garnish and serve.

Turn off the heat, toss in the reserved scallion greens, and serve immediately with copious amounts of steamed white rice.

Notes

  • The secret is the crust.

Do not skip shallow-frying the potatoes. It creates a micro-crust that seals the starch and acts like a sponge for the braising liquid, elevating the dish from a mushy mess to an authentic Cantonese masterpiece.

  • Fat is flavor.

Stick to 80% lean ground pork. The rendered fat emulsifies with the oyster and soy sauces to create the signature glossy, savory gravy.
