Before you start
Set up your molds.

Ingredients

Method

In a medium bowl, whisk together the sugar, vanilla sugar, baking powder, flour, and custard powder.

Divide the chilled dough into twenty equal pieces, rolling them into smooth balls. Drop one ball into each prepared mini muffin liner.

Carefully spoon a half-teaspoon of thick raspberry jam into each indentation, being careful not to overfill or they will erupt like lava in the oven.

Bake on the middle rack for 12 to 14 minutes. They should remain beautifully pale, not golden brown.

Nail the jam.
