The technique demands the violent beating of salted pork to make it bouncy, and the patience to let the cabbage reduce to a sweet, dark glaze before piling yesterday's cold pork meatball onto dense supermarket rye over a thick smear of salted butter. Let the purple cabbage bleed into the bread, and eat it with your hands.
Before you start
The cabbage and pickles should be made ahead of time.
Both the gammeldags rødkål and the agurkesalat taste significantly better if their flavors are allowed to meld in the refrigerator for a day or two, making weeknight assembly nearly instant.

Method

Sauté the red cabbage.
Melt the butter or duck fat in a large heavy-bottomed pot over medium heat, add the sliced cabbage, and sauté gently for 5 minutes until it begins to collapse.

Braise the cabbage with vinegar and warm spices.
Add the apple cider vinegar, redcurrant jelly, cinnamon, cloves, and star anise to the pot, cover, and simmer on low for 45 to 60 minutes until deeply purple and reduced to a sticky glaze.

Salt the cucumbers to draw out excess water.
Toss the paper-thin cucumber slices with the kosher salt in a colander and let them sit at room temperature for 15 to 20 minutes to ensure they stay crisp in the brine.

Squeeze and brine the cucumbers.
Firmly squeeze the excess liquid out of the cucumbers by hand, then submerge them in a whisked brine of the white vinegar, water, sugar, and peppercorns to chill for at least an hour.

Beat the ground pork and salt until sticky.
Place the ground pork and salt in a bowl and beat vigorously with a wooden spoon for 2 to 3 minutes until the meat becomes incredibly cohesive and pulls away from the sides, a vital grandmother's secret known as stirring it sejt.

Incorporate the aromatics and hydrate the meat.
Mix in the grated onion, egg, flour, pepper, and allspice, then gradually stir in the milk until absorbed, covering and refrigerating the mixture for 30 minutes to allow the flour to hydrate.

Form and fry the frikadeller.
Heat the butter and oil in a large skillet over medium, use a water-dipped spoon to form the meat into slightly flattened ovals, and fry for 6 to 8 minutes per side until a dark golden-brown crust forms.

Assemble the smørrebrød with a waterproof barrier of butter.
Generously butter the dark rye bread to protect it from soggy toppings, lay down a crisp lettuce leaf, and shingle thick slices of the warm frikadeller across the foundation.

Garnish with the cabbage, pickles, and parsley.
Top the shingled meat with a spoonful of the braised red cabbage, a few slices of the pressed pickles, and a fresh sprig of parsley, eating it properly with a knife and fork.
Notes
Sourcing the right bread is non-negotiable.
Skip the airy American deli rye; look for dense, square packages of Westphalian Pumpernickel in the international aisle or a heavy sourdough rye packed with kernels from a local baker.
Do not skip aggressively beating the meat.
Unlike Italian meatballs where a gentle touch is prized, Danish frikadeller require you to aggressively work the proteins with salt so they can hold their milk and bounce back when bitten.
