Matpakke & Smørrebrød (The Rhythms of the Nordic Day)
If you went to school in Scandinavia, you know the smell of a proper matpakke: a comforting hit of coarse rye, butter, and sweet brown cheese. This isn't a sandwich in the American sense; we don't put a lid on our bread here. It’s an unpretentious stack of open-faced slices, built on dense bread and topped with whatever makes sense. The secret to surviving the commute isn't some complex culinary trick, but a humble square of parchment paper placed between every slice. It’s a beautifully functional, egalitarian lunch that peels apart at your desk and tastes exactly like home.
Before you start
Cut the divider paper.
Cut standard parchment or wax paper into four 4-inch squares roughly the size of your bread slices before you begin.
Ingredients
- dense dark German-style rye bread4 slices
- unsalted butter2 tbsp
- smooth liverwurst or braunschweiger2 slices
- English cucumber3 slices
- Jarlsberg cheese2 slices
- red bell pepper2 slices
- egg1 large
- Kalles Kaviar or smoked salmon1 tbsp
- Ski Queen Gjetost brown cheese2 slices
Method
- 01
Lay the bread slices flat on a cutting board and spread a thin, even layer of butter on each.
Take the butter all the way to the edges. This acts as a moisture barrier so the dense rye doesn't get soggy by noon.

Construct your open-faced sandwiches one by one.
Keep them relatively flat. Top the first slice with the liverwurst and cucumber, the second with the Jarlsberg and bell pepper, the third with the egg and caviar, and the fourth with the brown cheese.

Stack the slices into a tower using divider paper between each layer.
This is the grand Scandinavian secret. Place a square of parchment directly on top of the first slice's toppings, then set the second slice right on top of that paper. Repeat until the stack is built, placing a final square of paper over the top slice.

Wrap the entire stack tightly in a larger sheet of parchment paper.
Fold the long sides over the stack, tucking one edge under the other. Fold the ends into triangles like a present and tuck them underneath before securing with a rubber band.
Notes
Respect the architecture.
The divider paper (mellomleggspapir) is absolutely non-negotiable. It's the only thing keeping the liver pâté on slice one from destroying the bottom of slice two.
Choose the right canvas.
Do not use soft, squishy American sandwich bread. The bread must have structure and a dense crumb to hold up to the toppings and the commute.
