Soak the black urad dal, claim the back burner, and let a heavy Dutch oven sit until the lentils collapse. For this classic born in Delhi's legendary Moti Mahal restaurant, the secret is the butter, how you mercilessly scrub the lentils, how you crush them to release their creamy starches, and the ancient smoking trick at the very end. Fold in the cream, drop the heat, and do not rush the final simmer.
Before you start
Vigorously scrub the dry lentils and beans with salt to remove their bitter, dusty residue.
The night before cooking, place the black lentils and kidney beans into a large bowl with one teaspoon of kosher salt. Rub them together with your hands for a minute, add water, and drain the murky liquid. Repeat three or four times until the water runs clear, then cover with fresh water and soak for at least eight hours.

Method
- 01
Transfer the drained lentils to a pressure cooker with four cups of fresh water, the cardamom pod, bay leaf, and ginger-garlic paste.
Cook on high pressure for 35 minutes, allowing the pressure to release naturally for at least 15 minutes.

Aggressively mash the cooked lentils against the side of the pot.
Discard the whole spices, check that a kidney bean squishes effortlessly, and use a heavy ladle or potato masher to crush about a quarter of the lentils to release their internal starches.

Fry the cumin seeds in heated ghee until they sizzle and pop.
Use a heavy-bottomed Dutch oven over medium heat, then add the grated onion and fry for about eight minutes until deeply golden brown before stirring in the fresh ginger and garlic pastes.

Cook down the tomato puree and dry spices until the fat visibly separates.
Add the puree, Kashmiri chili powder, coriander, and turmeric, cooking this masala until the moisture evaporates and the fat shimmers around the edges.

Fold the mashed lentils and their starchy cooking liquid into the masala.
Bring to a gentle boil, then immediately reduce to the lowest setting, stirring in the butter cubes, heavy cream, crushed fenugreek leaves, and garam masala.

Simmer the dal uncovered for at least thirty minutes.
Stir the bottom every five minutes to prevent the starchy lentils from scorching; the longer it simmers, the richer the final gravy will become.

Perform the dhungar smoking ritual to capture the authentic restaurant flavor.
Heat a piece of hardwood charcoal over an open gas flame until red hot, place it in a small foil boat floating on top of the finished dal, drop a half teaspoon of ghee onto the coal, and instantly clamp the lid shut for five minutes.
Notes
Never substitute the dairy.
The intrinsic dryness of black lentils must be counteracted by rich animal fats; coconut milk or cashew cream will fundamentally alter the chemistry and ruin the dish.
Do not skip the rigorous salt wash.
Failure to mechanically scrub the lentils will leave a dusty, bitter residue that turns the final gravy an unappealing gray instead of a vibrant reddish-brown.
