Cypriot Pan-Fried Halloumi with Fresh Mint and Lemon

Cypriot Pan-Fried Halloumi with Fresh Mint and Lemon

Τηγανητό Χαλλούμι·(tiganitó chaloúmi)

SNACKS

Slice the halloumi a quarter-inch thick, drop it into a cast-iron skillet, and hit it with high heat until the edges blister. This cheese refuses to melt when heated; instead, the proteins hold their structure, allowing you to pan-fry thick slabs until they develop a deeply bronzed crust while the interior softens into a rich chew. The cheese hisses.

Real fast food happens inside a ten-minute window, requiring no flour, no complicated breading, and no lengthy prep. The salty fat of the cheese is instantly balanced by a squeeze of fresh lemon and a scattering of bright mint. It hits the pan, it hits the plate—eat it immediately.

Before you start

  • Remove the halloumi from its packaging and rinse it very briefly under cold water.

If the cheese is sitting in an abundance of heavy brine, this washes away excess surface salt.

  • Aggressively pat the block completely dry with paper towels.

Do not skip the drying step; moisture is the absolute enemy of a golden crust and will cause the cheese to steam.

  • Slice the cheese into thick rectangles.

Aim for exactly 1/2-inch thick slabs so the interior has time to soften without the exterior burning.

Ingredients

  • authentic Halloumi cheese8 oz
  • extra-virgin olive oil1 tbsp
  • lemon1/2 med
  • fresh mint leaves2 tbsp
  • black pepper1/4 tsp

Method

  1. 01

Place a large cast-iron skillet or heavy-bottomed non-stick pan over medium heat.

Add the olive oil and let it heat until it shimmers in the pan.

  2. 02

Carefully lay the halloumi slices into the hot pan, ensuring they have plenty of space between them.

Do not crowd the pan, or the cheese will steam instead of searing. Leave them completely undisturbed for 2 to 3 minutes, until the undersides develop a deep, golden-brown crust.

  3. 03

Using a thin spatula or tongs, flip the slices and fry the other side for another 1 to 2 minutes.

The cheese will release some of its own natural oils as it cooks, aiding the frying process.

  4. 04

Transfer the hot cheese immediately to a serving plate.

You can briefly touch them to a paper towel first if there is excess oil in the pan.

  5. 05

Squeeze the fresh lemon juice directly over the hot cheese so it sizzles.

Scatter the freshly chopped mint and a generous grind of black pepper over the top. Serve immediately while the cheese is still hot and squeaky.

Notes

  • Eat it while it squeaks.

Halloumi is best consumed straight out of the pan. As it cools, the fat solidifies and the protein matrix tightens, turning the cheese from a decadent, chewy bite into something unpleasantly rubbery. Have your lemon wedges and chopped mint ready to go before the cheese even hits the heat.

  • Source the real deal.

While generic cow's milk halloumi works well, true Cypriot halloumi is made from a blend of sheep's and goat's milk, which offers a slightly earthier, far more complex flavor profile and an optimal ketogenic fatty acid profile. Look for imported Cypriot blocks at specialty counters.

  • Rely on the dry pat.

Keto cooking removes the crutch of cheap flour dredges to achieve a crispy exterior. We rely entirely on the Maillard reaction—the browning of the dairy proteins. Any residual water from the packaging brine will lower the temperature of the pan and steam the cheese. Dry your halloumi thoroughly for the best possible crust.
