If you ask a first-generation kid from an Ohio suburb what smells like home, it's usually garlic, olive oil, and toasted breadcrumbs. In Sicily, where frying fats were once an expensive luxury, home cooks figured out how to make a perfectly crispy, intensely savory cutlet without flour, without eggs, and without a vat of boiling oil. This is weeknight cucina povera at its absolute best: minimal ingredients, zero fuss, and an explosion of genuine, old-country flavor bound together by good olive oil, sharp Pecorino, and an unexpected hit of fresh mint.
Ingredients
- thin chicken or beef cutlets4 large
- extra virgin olive oil3 tbsp
- lemon1 large
- plain breadcrumbs1 cup
- panko breadcrumbs1/2 cup
- Pecorino Romano1/2 cup
- fresh flat-leaf parsley1/4 cup
- fresh mint leaves12 med

Method

Preheat the oven and prepare the pan.
Heat the oven to 400°F (or 375°F convection). Line a large rimmed baking sheet with parchment paper and drizzle lightly with olive oil to help the bottoms crisp.

Mix the seasoned breadcrumbs.
In a wide, shallow dish, combine the plain breadcrumbs, panko, grated Pecorino, parsley, mint, garlic, oregano, salt, pepper, and lemon zest. Rub the mixture together with your fingers until the herbs and zest are evenly distributed and fragrant.

Coat the meat in olive oil.
Place the cutlets on a board and massage the 3 tablespoons of olive oil over the meat. There are no eggs here; the oil is the glue, so ensure every surface is completely slicked.

Press the cutlets into the breading.
Lay one oiled cutlet into the breadcrumb mixture and scoop extra crumbs over the top. Use the heel of your hand to press firmly so the crumbs adhere to the meat, then flip and repeat. Transfer to the baking sheet.

Bake the cutlets to a crisp.
Give the tops a final light drizzle of olive oil. Bake on the middle rack for 6 to 7 minutes, carefully flip with a thin spatula, and bake for another 6 to 8 minutes until golden and crunchy.

Serve immediately with fresh lemon.
Remove from the oven and serve hot, squeezing the lemon wedges over the top right before eating.
Notes
The Grandma Trick.
To ensure the crust sticks without egg, let the breaded cutlets rest on the baking sheet for 5 to 10 minutes before baking. The crumbs will hydrate slightly from the oil, cementing the crust in place.
The Griddle Adaptation.
If you prefer not to turn on the oven, heat a dry cast-iron skillet over medium-high heat. Cook the oiled, breaded cutlets directly on the hot iron for 3 to 4 minutes per side until charred and cooked through.
