Corned Beef Skillet Hash
BREAKFAST
Tuesday at 7:14 a.m., the novelty has worn off, and the sight of another plate of scrambled eggs might send you over the edge. Born in 19th-century New York—a brilliant collision of leftover Irish cabbage dinners and Jewish deli briskets—this diner-style masterpiece asks for exactly ten minutes of your actual attention. The secret is simple: walk away. Let the hot ghee and the cast-iron skillet do the heavy lifting while you pack lunches or stare blankly into your coffee cup. Do not apologize for the fat, do not fear the potatoes, and absolutely do not skip the runny egg on top. The fat sizzles. Leave the spatula on the counter until that bottom crust is dark, then slide it onto a plate.
Ingredients
- ghee3 tbsp
- yellow onion1/2 med
- Whole30-compliant frozen diced hash brown potatoes16 oz
- kosher salt1/2 tsp
- black pepper1/2 tsp
- garlic powder1/2 tsp
- Whole30-compliant cooked corned beef8 oz
- eggs2 large
- fresh flat-leaf parsley2 tbsp
Method
- 01
Sauté the aromatics in hot ghee.
Melt 1 tablespoon of ghee in a large cast-iron skillet over medium-high heat, add the diced onion, and cook until softened and just beginning to brown at the edges, about 3 to 4 minutes.
- 02
Build the base with potatoes and seasoning.
Add the remaining 2 tablespoons of ghee, immediately dump in the frozen potatoes, season aggressively with the salt, pepper, and garlic powder, and toss thoroughly to coat in the fat.
- 03
Walk away and let the hash crisp.
Using a flat spatula, press the mixture down firmly into an even, compact layer across the bottom of the skillet and let it cook completely undisturbed for 6 to 8 minutes so it actually fries instead of steaming.
- 04
Add the beef and crisp the edges.
Once the bottom is deeply golden, flip the hash in large sections, scatter the chopped corned beef evenly over the top, press it flat one last time, and cook undisturbed for another 5 to 7 minutes to render the fat and crisp the edges.
- 05
Fry the eggs in a separate skillet.
While the hash finishes its final crisping phase, fry the eggs to your preferred doneness, aiming for a runny yolk to create a rich sauce for the potatoes.
- 06
Plate and serve immediately.
Divide the hash between plates, crown each with a fried egg, and shower with fresh parsley.
Notes
Hidden Sugar Label Check for the potatoes.
Many commercial frozen hash browns are sprayed with dextrose to accelerate browning; check the ingredient list to ensure it says "potatoes" and absolutely nothing else (Cascadian Farm Organic is a reliable brand).
Hidden Sugar Label Check for the corned beef.
Deli meats are notoriously pumped with sugar and non-compliant preservatives like sulfites and nitrates, so verify the ingredients with your deli counter or seek out compliant pre-packaged brands like Applegate.
Why this swap?
Authentic diner hash is swimming in butter, but because this protocol eliminates dairy proteins, we use ghee to deliver that exact same rich, nutty flavour while safely removing the whey and casein.
