For a first-generation kid growing up in the American suburbs, the smell of popping mustard seeds and warm, tangy yogurt meant one thing: comfort. Mor Kuzhambu is the ultimate South Indian weeknight hack—a creamy, slightly sour buttermilk curry that comes together faster than you can cook the rice to serve it with. While a grandmother in Chennai might use native ash gourd, a mix of supermarket chayote and zucchini perfectly mimics that essential melting texture. The secret here is simple: soak the lentils in hot water immediately to build a starchy buffer, and whatever you do, never let the yogurt boil. Wait for the froth, kill the heat, and you've captured the exact taste of home.
Before you start
Soak the lentils and rice.
The moment you walk into the kitchen, place the toor dal and raw white rice in a small bowl and pour the 1/4 cup of hot water over them. Let them soak while you prep the vegetables.
Ingredients

Method

Cook the vegetables.
In a medium heavy-bottomed pot, combine the chayote, turmeric, salt, and 1 cup of water. Bring to a boil over medium-high heat and cook for 5 minutes, then add the zucchini and cook for another 3 to 4 minutes until both vegetables are fork-tender but not mushy.

Blend the spice paste.
Drain the hot water from the soaked dal and rice and transfer them to a blender. Add the coconut, green chilies, ginger, cumin seeds, and a splash of water, then blend into a very smooth, fine paste.

Whisk the buttermilk base.
In a large bowl, whisk the yogurt, 1/2 cup of water, and asafoetida vigorously until completely smooth and free of lumps. Stir the blended coconut and spice paste thoroughly into the whisked yogurt.

Simmer the curry without boiling.
Lower the heat under the cooked vegetables to medium-low and pour in the yogurt mixture. Stir gently and watch the pot closely for 4 to 6 minutes; the absolute second you see frothy bubbles attempting to rise at the edges, kill the heat immediately so the yogurt doesn't curdle.

Temper the spices.
Heat the coconut oil in a small skillet over medium heat. Add the mustard seeds, and when they begin to crackle, add the fenugreek seeds, broken red chilies, and curry leaves. Swirl for 3 seconds until aromatic, then pour the hot oil directly into the curry and let it rest uncovered for 5 minutes before serving.
Notes
The golden rule of Mor Kuzhambu.
Never let the yogurt reach a rolling boil. The starches from the soaked lentils act as a buffer, but boiling will still cause the dairy proteins to tighten, resulting in a separated, grainy, and watery mess.
Let it breathe.
Do not cover the pot with a tight lid immediately after cooking. Trapped steam raises the internal temperature and can curdle the dish retrospectively.
