The secret to these savory, lacy-edged pancakes isn't found in over-spicing. It lies in sourcing real Indian besan, enforcing a mandatory resting period so the batter hydrates properly, and mincing the aromatics into absolute oblivion so they don't tear the delicate crepe. Get the pan scorching so the batter hisses on contact. Slide it onto a plate, pour the tea, and eat it while the edges crackle.

Before you start

  • Mince the vegetables into absolute oblivion.

    If the chunks of onion or tomato are too large, they will drag across the pan and tear the delicate crepe right down the middle.

Ingredients

  • Indian besan1 cup
  • rice flour2 tbsp
  • ajwain1/2 tsp
  • turmeric powder1/4 tsp
  • Kashmiri red chili powder1/4 tsp
  • fine sea salt3/4 tsp
  • water3/4 cup
  • red onion1/4 cup
  • tomato1/4 cup
  • Serrano pepper1 med
  • fresh ginger1 tsp
  • fresh cilantro3 tbsp
  • neutral oil or ghee2 tbsp

Method

    Whisk the dry ingredients with water and let the batter rest.

    Combine the besan, rice flour, ajwain, turmeric, chili powder, and salt, then whisk in the water until smooth; set it aside for 15 to 20 minutes so the heavy flour hydrates and won't wreck your stomach.

    Fold in the micro-minced aromatics.

    Check the batter's consistency—it should flow like a thin crepe batter, so add a splash of water if needed—then fold in the onion, tomato, ginger, serrano, and cilantro.

    Heat and condition the skillet over medium-low.

    Do not let the pan get smoking hot, or the batter will seize instantly upon contact; wipe the surface with a paper towel dabbed in a single drop of oil.

    Spread the batter into a thin disc using rapid concentric circles.

    Pour a ladleful into the dead center of the pan and use the rounded back of the ladle to immediately spiral the batter outward into an even six-inch circle.

Notes

  • Buy real Indian besan.

    Western garbanzo bean flour is coarse and requires totally different hydration; if you use it, the chilla will be dense and bitter.
