Real Texas nachos are not a frat-house pile of stale chips drowned in stadium pump-cheese. They were born out of necessity and hospitality in 1943 just across the Rio Grande from Eagle Pass, Texas, by a maître d' named Ignacio Anaya, but recreating his three-ingredient moment of genius simply requires laying the chips flat. Build a single layer on a standard baking sheet where every chip is a perfectly composed bite of hot, crisp tortilla, a smear of refried pinto beans, and melted real Colby, then slide the pan under the broiler just until the cheese flat-out melts, and finish with the sharp bite of a single pickled jalapeño wheel—anything else is an imposter.
Before you start
Respect the single-layer architecture.
Never pile your nachos, as it guarantees uneven heat distribution, leaving you with soggy chips on top and bare, dry chips on the bottom.
Ingredients
- sturdy restaurant-style corn tortilla chips30
- bacon grease or neutral oil1 tsp
- canned refried pinto beans3/4 cup
- Colby Longhorn or mild Cheddar cheese2 cup

Method
- 01
Preheat the oven and prepare your canvas.
Preheat the oven to 375°F and line a heavy-gauge baking sheet with parchment paper or foil, or pull out a large, well-seasoned cast-iron skillet.

Warm and fortify the beans.
In a small skillet over medium-low heat, warm the bacon grease and stir in the refried beans until they loosen into a smooth, easily spreadable consistency.

Lay the foundation.
Arrange the tortilla chips on the baking sheet in a single, unstacked layer, ensuring absolutely no chips are overlapping.

Apply the mortar and the blanket.
Using a butter knife, smear exactly one teaspoon of warm beans onto the center of each chip, then sprinkle a generous tablespoon of grated cheese over the beans so it reaches the edges of the tortilla.

Crown each chip.
Gently press exactly one slice of pickled jalapeño into the center of the cheese on every single chip.

Bake until golden and gooey.
Bake for exactly 4 to 5 minutes, watching closely, until the cheese is fully melted into a golden canopy and the exposed edges of the tortilla chips are fragrant and toasted.

Pull them from the oven and eat them while they're hot.
Notes
Keep the cold condiments off the hot chips.
If you insist on sour cream, guacamole, or salsa, serve them strictly on the side to preserve the textural integrity of the crisp tortilla.
Ditch the pre-shredded cheese.
Bagged cheese is coated in cellulose that ruins a good melt; taking sixty seconds to grate a block of Colby by hand is the single biggest upgrade you can make to this dish.
