A morning staple of the Deccan plateau, khagina traces its roots to ancient Persia. Instead of frantically stirring eggs until they turn to rubber, you'll spend exactly seven minutes building a base of caramelized onions, diced serrano chilies, and tomatoes. Crack the eggs into the pan, put a lid on it, and walk away—leaving you five free minutes to pack a lunch or stare blankly at the wall while the ghee works its magic.

Ingredients

  • ghee2 tbsp
  • yellow onion1 large
  • jalapeño pepper1 med
  • garlic2 clove
  • fresh ginger1 inch
  • Roma tomato1 med
  • ground turmeric1/2 tsp
  • ground coriander1/2 tsp
  • sweet paprika1/2 tsp
  • cayenne pepper1/4 tsp
  • kosher salt1/2 tsp
  • eggs4 large
  • fresh cilantro1/4 cup

Method

    Sauté the aromatics in hot ghee.

    Place a medium heavy-bottomed skillet over medium-high heat and melt the ghee. Add the diced onion and jalapeño, cooking for about 4 to 5 minutes until the onions soften, turn translucent, and pick up a light golden-pink color without burning.

    Bloom the ginger, garlic, and spices.

    Push the onions to the edges to create a clearing in the center, drop in the minced garlic and ginger, and let them sizzle for 30 seconds. Add the turmeric, coriander, paprika, cayenne, and kosher salt, stirring constantly for 30 to 45 seconds so the spices bloom in the fat and release their essential oils.

    Smash the tomatoes to create the gravy.

    Toss in the chopped Roma tomato and cook for 2 to 3 minutes. Use the back of your spoon to smash the tomato as it softens, breaking it down into a thick, chunky, sizzling paste.

    Poach the eggs in the spiced matrix.

    Reduce the heat to medium-low and use your spoon to make four small wells in the mixture. Crack one egg directly into each well, sprinkle a tiny pinch of salt over each yolk, and cover the skillet with a tight-fitting lid.

    Let the stove do the rest of the work.

    Walk away and let the eggs steam for 5 to 7 minutes until the whites are opaque and set but the yolks still jiggle. Remove from the heat, scatter with fresh cilantro, and serve immediately straight from the skillet.

Notes

  • The Canned Tomato Caveat.

    If fresh Roma tomatoes look like pale, sad rocks at the supermarket, you can absolutely substitute a quarter-cup of canned diced tomatoes. However, read your labels: many commercial canned tomatoes contain hidden added sugar to balance acidity, which is a hard rule-break on the Whole30. Look for brands with only tomatoes, salt, and citric acid.

  • The Burst of Steam.

    If your lid doesn't fit tightly, the tops of your eggs might struggle to set while the bottoms overcook. If you notice this happening, splash one tablespoon of water against the bare side of the hot skillet and immediately replace the lid to instantly cook the top of the egg whites.
